Grilled Vegetables with BBQ Glaze

Grilled vegetables with a BBQ glaze are a delicious and healthy addition to any British BBQ. This recipe ensures that your veggies are packed with flavour and perfectly charred. Here’s how to make them.

Ingredients:


For the Vegetables:

2 red peppers, cut into strips

2 courgettes, sliced into rounds

1 aubergine, sliced into rounds

1 red onion, cut into wedges

200 g cherry tomatoes

200 g button mushrooms

2 tablespoons olive oil

Salt and pepper to taste


For the BBQ Glaze:

120 ml tomato ketchup

60 ml apple cider vinegar

60 g brown sugar

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon chilli powder

Salt and pepper to taste


Instructions:


Preparing the Vegetables:

  1. Preheat the Grill: Preheat your grill to medium-high heat (about 200-220°C).

  2. Prepare the Vegetables: Place all the cut vegetables in a large bowl. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.


Making the BBQ Glaze:

  1. Combine Ingredients: In a saucepan, combine the tomato ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, onion powder, and chilli powder.

  2. Simmer: Bring the mixture to a simmer over medium heat, stirring occasionally. Let it cook for about 10-15 minutes, or until the glaze thickens. Season with salt and pepper to taste. Remove from heat and set aside.


Grilling the Vegetables:

  1. Grill the Vegetables: Place the prepared vegetables directly on the grill grates or use a grill basket for smaller pieces. Grill for about 10-15 minutes, turning occasionally, until the vegetables are tender and nicely charred.

  2. Baste with BBQ Glaze: In the last few minutes of grilling, brush the vegetables generously with the BBQ glaze. Turn and baste them a few times to ensure they are well coated and caramelised.


Serving:

  1. Serve: Transfer the grilled vegetables to a serving platter. Drizzle any remaining BBQ glaze over the top and serve hot.


Chef’s Top Tip:

For even cooking, cut the vegetables into similar-sized pieces. This helps ensure they all cook at the same rate and prevents any pieces from burning while others are still undercooked.
