Ingredients:
350g plain flour
75g granulated sugar
10g baking powder
1/4tsp salt
85g cold unsalted butter, cubed
150g milk (plus extra for brushing)
1tsp vanilla extract
100g of your favourite mix-ins (chocolate chips, dried fruit, nuts, etc.)
Method
Preheat your oven to 200°C.
Line a baking sheet with parchment paper.
In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt.
Add the cold butter cubes to the dry ingredients. Use your fingertips to rub the butter into the flour mixture until it resembles coarse crumbs.
Create a well in the center of the dry ingredients. Pour in the milk and vanilla extract. Gently mix the ingredients until just combined. Do not overmix; the dough should be slightly claggy.
Add your mix-ins like chocolate chips or dried fruit, gently fold them into the dough until evenly distributed.
Turn the dough out onto a lightly floured surface. Gently pat it into a 2.5 cm (1-inch) thick round.
Use a round biscuit cutter to cut out scones from the dough. Avoid twisting the cutter to ensure even rising.
Place the scones on the prepared baking sheet, leaving a little space between each one. Brush the tops of the scones with a bit of milk to help them achieve a golden-brown color during baking.
